It’s time for Halloween and our family is enjoying our fair share of sweet treats and Halloween fun. Growing up Halloween was always fun time of year. Every year we would have a big Halloween party and enjoy plenty of sweet treats with our friends. I have to say it has in many ways it has inspired me to have my own fun with my kids.
There’s something about Halloween and pudding. We always seem to enjoy more pudding and parfaits around this time of year so I wanted to highlight the pure joy in one of our favorite deserts. Monk Fruit In The Raw® is made from delicious vine-ripened monk fruit, also called luo han guo, it’s the zero-calorie sweetener that tastes like sugar.

Banana Raspberry Pudding Parfaits
Ingredients:
- Banana cream pudding
- 3 cups skim milk
- 1 package raspberries
- 1 cup Monk Fruit In The Raw®
- candy eyeballs found at the craft store
When cooking with my girls we like to keep it simple. We enjoy turning simple flavors into flavorful combinations that really work well together.
Pudding is so easy just add milk and stir. It’s one of the things my kids like to make the most because it’s so easy to do. Once you’re ready to make the raspberry parfait topping you just add the whole package of raspberries to your sauce pan.
Then add the sugar and 3 TBSP of water.
You ill want to slightly crush the berries and cook of a medium heat.
I found some really great Halloween props at our local craft store. These open test tube beakers are so much fun and make a great container for the pudding.
I add the raspberry on top and use a straw to push the raspberry into the pudding.
Top with candy eyeballs and fondant fingers and you have a creepy dessert that the whole family will enjoy.

This is adorable! My kids would get such a kick out of it! So would my boyfriend. lol. There’s not a whole lot of desserts that bring me back to childhood because we weren’t allowed a lot of sweets, but I do have some casseroles that bring me back.

I have seen this in stores and have not tried it yet. We use natural sweeteners for all of our baking so I will try this one next time we need to stock up. I love your pudding cups, they turned out perfect for Halloween.
