With our family being stuck in the house for the last several months we are lucky enough to have plenty of areas to hike and get outside in the first. One of our favorite on-the-go snacks are Harvest Snaps. So whether we’re on the go to a local hiking trail or just cooking in the kitchen we always seem to keep our favorite snacks around.

Found in the produce isle Harvest Snaps are made from green peas, red lentils and black beans, and feel like they’re totally straight from the farm. With nine delicious varieties to choose from, it’s fun to find your favorite flavors!

I love finding easy ways to spice up some of my favorite recipes. These are so delicious you could easily take these on the go!

Crunchy Cheesy Jalapeño Poppers

Ingredients –

  • 2 cups Harvest Snaps Lightly Salted Green Pea Snack Crisps
  • 6 fresh large jalapeños
  • 1/2 cup cream cheese
  • 1/2 cup shredded cheese
  • 1 small diced shallot
  • 2 TBSP diced chives
  • seasoning to taste

I start first by preheating the oven to 425 degrees. Dice all of your onions and slice the jalapeños in half to fill with your filling. I scoop out all of the seeds because my kiddos love these and I don’t want them spicy. If you liked spice you could easily leave in some seeds for some heat.

I also crushed my Harvest Snaps and set those to the side to dip my jalapeño poppers in. I mixed all of my filling ingredients and also set that aside. I used my favorite all purpose seasoning with no salt but you could also use anything you like in these and make them your own! Once my filling came together I just spooned them into my prepped jalapeños.

Just bake for 15-mins until golden brown at 425 degrees.

This is so simple you could make it all summer long for easy entertaining.
