As a vegetarian I know I’m always trying to come up with delicious ways to enjoy some of my favorite meals. Getting my kids to eat more vegetarian meals is really what it’s all about and buffalo cauliflower always is a favorite. I used that same delicious recipe that I know and loved and made a simple salad recipe that I know you’ll love too!

Buffalo Cauliflower Salad Recipe

  • one head of cauliflower
  • 1 cup of buffalo sauce (I use Sweet Baby Rays found at my local grocer)
  • mixed greens
  • mini tomatoes
  • feta cheese

I start first by mixing the buffalo sauce and cut up cauliflower. I use parchment paper so I can easily toss after baking. The cauliflower takes 20-30 minutes minutes to bake at 425 degrees.

The salad portion you can literally use anything in your fridge. The buffalo cauliflower adds such a delicious flavor to the salad hat I don’t even use any dressing.

I know I like to make this for lunch but we’ve even done it for dinner. It takes under a half an hour and is a family favorite for everyone!
