One of my favorite things about the morning is getting to spend time with my girls. Working full time I spend five days a week without eating dinner with my children because my hours at work keep me late. That means that we make the most of our mornings and with breakfast being the most important meal of the day we try to make it fun and nutritious.

This holiday season we are so proud to get to partner with Dole Packaged Foods. Their products are not only delicious and nutritious but I really believe in their non GMO products and all of the work they do to help Food Share and Feeding America. Here in Los Angeles through Dole’s partnership they help fund school gardens at elementary schools and science programs in local high schools. Additionally Dole donates 1 million pounds in healthy foods to local communities that need it most.

This week I decided to try one of the recipes created for Dole by Chef Jamie Gwen her morning tacos with pineapple black bean salsa. It’s so easy to make and was a fun twist on breakfast. Our whole family enjoyed these and I can easily see myself making these again.

Morning Tacos With Pineapple Black Bean Salsa
Recipe Type: Breakfast

Ingredients
  • 1 can of Dole Pineapple Tidbits drained
  • 1 can of black beans drained and rinsed
  • 1/2 small red onion
  • 1/4 cup fresh cilantro
  • juice of 1/2 line
  • 1/2 lb. ground sausage
  • 1TBSP butter
  • 8 large eggs beaten
  • 1/4 cup fire roasted green chilies
  • 1/2 shredded cheese
  • 8 whole grain tortillas

Start out by stirring together the pineapple, black beans, onion, cilantro and lime juice.

At the same time cook the sausage over medium heat in a large skillet. 

Then just heat the butter and add in the eggs. I let things be separate so our girls can pick the things they wanted to put on their tacos. Our own breakfast taco bar and everyone enjoyed it. 

This meal took less than thirty minutes to make and is a delicious and easy way to start the day. 

Being that the Rose Parade is coming and here in Southern California it’s an honored tradition. Last year our family had the honor to get to see Dole’s 2018 Rose Parade float while it was being built. This year our family will actually get to help and this years float is called The Rhythm of Paradise showcases the respect the Hawaiian people have for their land, ocean life and traditions.

    I used to make breakfast but I have never had them with pineapple black bean salsa. It looks delicious! And thanks for sharing your recipe. I will denitely use it to make my morning tacos the next time.
