I pack lunch boxes very day for our girls and they always like unique items in their lunch boxes. While I do work a full time job outside of the house now baking homemade treats for Thor lunchbox snacks makes me feel good. Plus this time of year our girls love everything pumpkin so they’re easy to please with mini pumpkin cheesecake muffins.

Mini Pumpkin Cheesecake MuffinsMini Pumpkin Cheesecake Muffins Recipe 

Ingredients –

  • 1 12/2 cups flour
  • 1 cup sugar
  • 1/4 cup brown sugar
  • 1 TSP baking soda
  • 1 TSP cinnamon
  • 1 tsp pumpkin pie spice
  • 2 eggs
  • 1 can organic pumpkin puree
  • 1 TSP vanilla extract

Cheesecake Mix –

  • 1/2 cup confectioners sugar
  • 1/2 cup cream cheese

Start first by breathing the oven to 350 degrees. I used small baking cups in the pan and then started to mix all of the ingredients together. Once the pumpkin muffin mixture was all together I put about 1/3 full in each muffin the topped it with a small scoop of the cheesecake mixture. Homemade Lunchbox Snacks - Mini Pumpkin Cheesecake Muffins

I only baled them for 10 minutes because they’re so small they bake fast. Your oven time may vary so watch the first batch. Then just cooled them out of the oven.

These are so delicious and one of our girls favorite lunchbox snacks. They’re just perfect for popping!
