It’s small moments like making lunch with my girls or celebrating a holiday with a delicious afternoon treat. We are happy to partner with Jif as a brand ambassador.

Valentine’s Day is coming and even though I like to celebrate every day it’s even more special to show extra love on Valentine’s Day. One of our favorite treats are french macaroons. They’re light and and delcious in each bite.  Thy are said to be one of the toughest cookies to master but if you follow a few simple steps they’re incredibly easy to make. french macaroonsOne of our favorite products in the kitchen is Jif® Hazelnut Spreads. Spread them on fruit for a delicious afternoon snack or topping your whole wheat toast or waffle in the morning there are endless possibilities with Jif Hazelnut Spreads.

They also happen to be the most delicious filling for a french macaroon and that’s exactly how we created these delicious strawberry cheesecake french macaroons.Macaroon ingredient simpleYou will need a stand mixer and a food processor for this recipe. You will also need piping bags with a 1/2 plain tip.

Strawberry Cheesecake French Macaroons

Ingredients – 

  • 1 cup powered sugar
  • 3/4 cup almond flour
  • 2 egg whites at room temp
  • red gel food coloring
  • 1 finger pinch of cream of tartar
  • 1/4 cup fine bakers sugar

Macaroons ingredientsThis recipe is super simple and only involves a few items. What is most important is the process. You will want to start first by combing the powered sugar and the almond flour in a food processor. Then you will sift the mixture. Sift once all the way, there will be some leftover larger pieces from the almond flour you can put that leftover aside for other uses. Then sift that mixture again and set aside.

Preheat your oven to 375 degrees.

The next most important step is the egg whites. You will put your room temperature egg whites in your stand mixer and start beating the egg whites on medium for 3 minutes. Then add in a pinch of cream of tartar and mix on high until soft speaks form, then add in the super fine bakers sugar. Making simple pink cheesecake MacaroonsOnce you have stiff peaks in this mixture you will slowly fold in the flour mixture and the red food coloring. Then transfer the mixture into a piping bag.Then you will pipe round and drag the tip to the side. You will tap the cookie sheet to let out any air and allow the batter to sit out for 15 minutes. Just before baking drop the heat in the oven to 325 degrees. Then bake for 10 minutes but halfway through you will rotate the cookie sheet. Macaroons before and after cookingOnce they are done baking you will leave them alone to cool. This is important!     For some reason I am not a macaroon person. I am however a huge cheesecake lover, I could always give someone else the macaroon part and suck out all the filling right? ROFLMAO 🙂
