The last two weeks have been incredibly challenging for me. I feel like I’ve really began to struggle as parent and trying to find the balance between not just giving my kids the things they want, but the things they need. We’ve been so busy as a family with work and activities we haven’t had much time to really connect. That struggle has been very present lately so I really wanted to just sit down and enjoy some simple moments together as a family.
Be it just cooking in the kitchen with my girls or enjoying a warm fire on a cold winter day. Life is all about creating lasting moments and sometimes in the day to day rush of life we lose sight of that. My girls love helping out in the kitchen so we had so much fun this weekend enjoying simple and yet meaningful moments together. We wanted to put a fun and flavorful new spin on one of our favorite simple weekend snacks, the twice baked potato.
Cheesy Jalapeño Twice Baked Potatoes Recipe
- 9 small potatoes
- 2 TBPS jalapeño
- 3 TBPS Cream Cheese
- 1/4 Cup cheddar cheese
- 1 TBPS olive oil

We of course enjoyed the snacks while watching a movie in front of our warm and toasty fire. We’ve had such a cold winter here in California so having everything we need to start a fire easily is important. We use Pine Mountain ExtremeStart™ Firestarters for creating quick and easy fires.

I definitely have to try this! I like the ingredients used to make these. I wouldn’t have thought to add jalapeños, but I will when I make them. Thank you for sharing!
