With swim, gymnastics, horseback riding, dance and computer engineering classes our girls stay plenty busy after school. From the moment our girls walk in the door after school we have things planned so our weekdays are very busy. I often joke around and call myself the taxi mom, because in between picking up and dropping off one kiddo I’m back to pick up and drop off another. With our six year old being in dance 11 hours a week she has a lot of commitments in between dance, tumbling and gymnastics. My kids are extremely busy but they really enjoy what they do and I think as a parent I just want to support whatever it is that makes them happy.
So I’m all across town and back home again so at the end of the day I like to make simple healthy meals that I know everyone will like. Especially come dinner time, because when our girls get home after their activities they are ready to eat!

One of meals our girls enjoy most is sausage and roasted peppers on rice, the sausage creates the perfect savory flavor to the rice and peppers. It’s a meal that cooks in less than 30 minutes and one that I know everyone will like.
Savory Rice & Smoked Sausage Bowl
- 1 package sliced Hillshire Farm Smoked Sausage
- 1/2 onion roughly chopped
- 1 bell pepper
- 3/4 cup snap peas
- 1 and 1/2 cups cooked brown rice
Brown rice is such a simple base to any meals and you can do so many things with flavors. You can use your favorite rice for this recipe and you can easily add more or less rice depending on how many you are serving. I’m a big fan of simple meals and this is is super simple. Our kids really like their Hillshire Farm Smoked Sausage a little crispy so I start out browning the sausage in a pan for 5 minutes until they have a little crisp.
Then add your vegetables and finish cooking another 5-10 minutes on medium heat.
This is almost a one skillet meal it’s that easy. Just serve on top of rice and you could even add some arugula and fresh spinach for extra vegetable and make it a loaded salad bowl. It’s easy and fresh and one of those easy weeknight meals I know I can rely on.

That looks so tasty and being a quick meal makes it even more appealing. We aim for quick and healthy meals, things like stir-fry or crock pot meals (since those are ready when we are). Fish and other seafood are good options too, as they cook so quickly.
We love using these sausages in all kinds of dishes. They are so versatile and quick to prepare. They go with just about anything! One of our favorites is a simple veggie stir fry and this is our protein.

This sounds like a great meal. My family would like it if I left out the snap peas and substituted broccoli florets. My husband especially would be all over this. You had him at sausage. My youngest loves anything with bell peppers too. I really love how colorful the bowl ends up being.
