enchaladas Dinner time is often the most stressful part of the day. Everyone is home form their activities and they’re hungry and want dinner now. When we’re in that mode I know I need a quick and easy dinner idea that I know the whole family is going to like. Enchiladas always seem to do the trick so I wanted to share a simple and vegetarian meal idea.

Vegetarian Black Bean Enchiladas

Ingredients –

  • Green enchilada sauce
  • 1/2 cup organic corn
  • 1 Mexican squash
  • 1/2 cup onion
  • 1/2 cup red bell pepper
  • 1/4 cup chopped cilantro
  • organic black beans
  • 1 cup cheddar cheese
  • whole wheat tortillas

vegetable enchiladas recipe Enchiladas are so simple just cut and mix everything together adding the cheese to the mixture then stuffing it in the tortillas. Make sure to preheat your oven to 375 degrees. veg enchiladas 3

Top with a little cheese on top then bake for 20 minutes. I like to add a little fresh cilantro on top and serve warm. veg enchaladas

These are a family favorite recipe and one simple and easy weeknight meal. Adding the squash really adds flavor and texture and I think they taste just as great as enchiladas with meat inside. It’s fun to try new things and try to reinvent our favorite meals only meatless versions. vegetarian enchaladas

    These are very healthy enchiladas that I want to make for dinner for my family. It is so important to make sure to eat healthy at every meal!

    Oh those look so good! I love enchiladas, but have never made a vegetarian! I will have to try these! I love the squash in them!
