tofu sandwiches My mornings are filled with work and workouts so by lunch I don’t want to weigh myself down with a heavy lunch. As a vegetarian I’m always trying to mix things up and when it comes to sandwiches the more veggies the better! We don’t eat a lot of tofu but the more I’m starting to cook with it the more I seem to find uses for it. I like that by simply grilling tofu you can create something delicious just like these simple sandwiches. tofu and vegetables

What You Need – 

  • Tofu
  • Organic romaine lettuce
  • tomato
  • green onion
  • organic sugar snap peas
  • bell pepper
  • pita bread
  • red bell pepper

I’m a big fan of keeping things simple so besides a little salt and pepper the tofu was just cooked in a pan on both sides until brown. cooking tofuJust sliced the vegetables enough to fit along one side of the pita. The green onion really add flavor and a little extra crisp so don’t forget the onion! Just layer on the veggies and add the tofu. It’s simple and delicious and one of my favorite new light lunches! tofu vegetable sanwich

    Oh that looks so good and healthy! We grow tomatoes, peas, and peppers in our container garden each summer…will be fun to make these with vegetables from our garden!

    We just started cooking a lot with tofu and it is such a healthy alternative to lunch meats. Thanks for the pita idea. I have been marinating the tofu and serving it with veggies over rice but this is another way of eating it.

    I have never had tofu before and honestly don’t ever want to try it. I do love pita bread and veggies so would make this with out the tofu.
