Our days are busy, we spend our mornings with the kids and rushing off to school. There’s work outs and work life in between after school activities for our girls. Each of our kids is busy with activities, swimming, computer programming, dance, horseback riding. There’a always some place to be so when it comes to dinner we try to make sure we sit down together for meals. This is a sponsored conversation written by me on behalf of Earth Balance. Earth Balance® spreads also taste delicious and are great to slather on toast they also help me make the perfect roasted vegetables. For dinner I can use Earth Balance® in side dishes such as roasted potatoes.

Simple Herb Roasted Vegetables

  • 4 organic potatoes (scrubbed and cut into cubes)
  • 1 cup organic baby carrots
  • 2 TSP organic Italian Seasioning
  • 1 TSP organic oregano
  • Earth Balance® Buttery Spread

I am a huge fan of simple dishes with lots of flavor. As a vegetarian I don’t believe in eating meat and like how I can find a dairy alternative in Earth Balance® Buttery Spread. Earth Balance spread herb roasted potatoYou will want to start first with washing and cutting the potatoes. Allow them to boil for 8 minutes while you reheat the oven to 375 degrees.

Next to make the potatoes buttery and delicious you’ll want to melt the Earth Balance® Buttery Spread and herbs. I used some oregano and Italian seasoning but you can use anything you have. Microwave for 15 seconds and mix together. Earth Balance spread herb roasted potato (4)Then you’ll want to toss your veggies in this delicious herb mixture.
Earth Balance spread herb roasted potato (5)Then bake for another 40 minutes. I just low how these turn out, they’re flavorful and my kids call it their favorite side dish! Earth Balance spread herb roasted potato (6)Serve alongside your favorite salad and fresh fruit and this is one of our favorite vegetarian and vegan meals! It’s not very complicated and can be added to almost any meal. For us it’s just another addition to one of our favorite meals of the day, dinner!
