brooklin outside cartwheelI remember some of my best summer memories were spent outside with my sister. We would spend all day playing in the dirt, making forts and exploring the creeks that wound their way through the mountains where we grew up. The sweet smell of pine as we would lie under the trees for lunch. It’s those moments I will never forget and I can still remember just how sweet summer smelled back then.

I hope our children make the same wonderful memories with one another and remember to smell the smells of summer and bask in the moments they create.

One thing I remember about summer is the simple meals we prepared. Our favorite KRAFT Macaroni & Cheese Dinner was always welcomed after a long day of play and it’s still an easy go to for lunch or dinner.

As we start to get ready for the long days of summer, I’m starting to remake our kids’ favorite dishes and I’m getting a little creative while I’m at it.
Grilled Broccolli Kernal Corn Mac Cheese sandwich recipe

Cheesy Broccoli KRAFT Macaroni & Cheese Dinner Grilled Cheese 

Ingredients – 

  • 1 box of KRAFT Mac & Cheese Dinner
  • sliced french bread
  • butter
  • milk
  • 1/2 cup steamed broccoli
  • 1 ear of corn

We started by letting our girls to cut their own shapes in the bread. This allows for a little fun and it’s a great way to see the vegetable additions to the grilled cheese.Grilled Broccolli Kernal Corn Mac Cheese sandwich with shapes cutout (5)
Next, make your KRAFT Macaroni & Cheese Dinner as directed. We cooked the corn for 10 minutes in the water before adding the pasta to finish cooking.

Then it’s time to make the grilled cheese! All of the vegetables should be prepped and cooked. Steamed Broccolli Kernal Corn Vegetables
I used a panini maker but you could easily cook your grilled cheese however you prefer. Add a little butter to one side of the bread then top with KRAFT Macaroni & Cheese Dinner and vegetables.

They’re the perfect sandwich to sit outside with and enjoy. In fact I hope it’s one of those specialties my girls always ask for and never grow out of!

For our family enjoying summer still has those same qualities it did when I was little. It’s about making new memories and enjoying our time with one another. So I hope my girls will have those same memories of enjoying lunch outside in the shade on a hot day. Making healthier choices for our family is also important to me so it’s nice to know we’ll still get the cheesy goodness we love in KRAFT Mac & Cheese.

    Our kids love to add peas to their macaroni and cheese. It is rare that we make it and they don’t request peas to be added. They do add a unique sweet flavor to the semi-salty cheese flavor.

    I love kraft macaroni and cheese, and I think not only do I love it because it tastes great, but so many fun and happy memories together with a nice dish – a great comfort food and so easy to make!
