Here in California we have a lot of everything. We have great places to see, microclimates, tons to do, and so many great foods to enjoy. California is home to a major source of US food product with Dairy being a big one.
Dairy products are a great way to get some of the nutrients and vitamins our bodies need everyday, but to the state of California, Dairy plays a huge part not only for us families but for our economy.
With June being National Dairy Month, California’s Governor Brown has just announced that June is now also “Real California Milk Month.” With California Dairy farmers and their families providing 20% of the milk for the United States, it is an important fact to think about and remember.
With it being Real California Milk Month and National Dairy month, we wanted to share these California dairy-inspired recipes that I used from the online California Dairy Cookbook created by the California Milk Advisory Board (CMAB). We sought out a recipe that we have been trying to master, good ole homemade mac and cheese. We used the Mom’s Mac which is a recipe from a resident Melissa from Los Angeles, CA. She said she makes this every Thanksgiving and it is “creamy, cheesy, and full of flavor.” So we decided to give it a go. Haven’t always had the best luck with homemade Mac N Cheese, but this came out great.
- 1 lb. large elbow macaroni
- 1/2 c. real California butter, cut into 6 to 8 pieces
- 3 tbsp. all-purpose flour
- 1 1/2 c. milk
- 8 oz. real California sour cream
- 1 c. bacon crumbles or bits, or more to taste (optional)
- 1 tsp. garlic salt
- 2 lb. shredded real California mozzarella cheese, divided
- 1 lb. shredded real California cheddar cheese, divided
- Salt and pepper
It was a straightforward recipe. Preheat your oven to 350F. Prepare your ingredients by boiling your macaroni. After it is cooked to the package directions and tender, replace it to the pan and add in butter entirely, than the flour. This is important to create a base for the cheese to stick to.
Next add in 1/4 of your cheeses and mix in thoroughly. This is also where you can add in your bacon crumbles or in our case we created a think layer on top. You will need a 4.5 – 5-qt baking dish. Bake for around 30-40 minutes or until lightly browned and bubbling.
Next turn up your oven to 400F and add on the rest of the remaining cheeses for an additional 10-15 minutes of cooking. Let it brown slightly and voila, your are done!
This huge dish not only was very good and is a large serving. You can reduce the ingredients for a smaller prepared portion.
