Weeknights are always our busiest nights from after school activities to kid’s sports activities there’s a lot going on after school and between dinner. I need easy solutions for meals so I often turn to our favorite meals and take shortcuts to make them easier. One thing our big family likes to do is shop at club stores like Sam’s Club. Not only can I get the portions we need for quick meals but I can also stay within budget. Foolproof Chicken Enchiladas Recipe
- 2 NatureRaised Farms® Boneless Skinless Chicken Breast Portions
- 1/2 cup cilantro
- 1 onion chopped
- 1 cup cheddar cheese
- 1 16 oz. can of your favorite red enchilada sauce
I start first by boiling the chicken breast and them chopping them and the other ingredients like onion and cilantro. To make the chicken enchiladas you will mix together the chicken, cheese, cilantro and onion. This will become the filling for your enchiladas.
Preheat oven to 375 degrees.
I like to add some sauce on the bottom of my baking pan. The key to rolling corn tortillas is to get them warm so they can roll without breaking. Also dip the tortilla in the red sauce.
Then add your filling and roll.
Then keep going until the pan is filled. Top with cheese then bake for 20 minutes.
The best thing about spending time together at the dinner table is coming together at the end of the night. It’s enjoying our favorite meals together and this is one of our family favorites, I like it too because it’s so simple to make!

This looks so delicious and simple to make. I will have to try this recipe. I like to make lasagna soup for a fast meal.
I like the idea of dipping the shells in the sauce. Then you wont have to dump so much on the top , more flavor, less mush.
