We have time in the afternoon in between school and dance and I like to make a healthy and filling snack for our girls. Dancing for hours each evening is hard work and as a mom I want the food they eat to fuel their bodies. It’s important t me that we eat more vegetables and thanks to I Can’t Believe It’s Not Butter we’re eating more vegetables with a new simple recipe guide.

Ingredients

  • 3 Tbsp. I Can’t Believe It’s Not Butter
  • 4 cups chopped assorted vegetables, (onion, zucchini and/or yellow squash)
  • 3/4 tsp. chili powder
  • 1 cup shredded 2% cheddar cheese
  • 2 Tbsp. chopped fresh cilantro leaves
  • 4 (10-in.) burrito size flour tortillasIcantbelieveitsnotbutter quesadilla (2)

I like simple meals and snacks but so often our kiddos can be overwhelmed with the greens on theirs plates. This recipe is really unique because it’s everything you love but you’d never expect it all together. You will start by prepping your vegetables. Icantbelieveitsnotbutter quesadilla (3)

Melt 1 tablespoon I Can’t Believe It’s Not Butter!® Spread in large nonstick skillet over medium-high heat and cook vegetables with chili powder, stirring occasionally, until tender, about 10 minutes. Icantbelieveitsnotbutter quesadilla (4)

Remove from heat and let stand until warm. Stir in cheese and cilantro.Icantbelieveitsnotbutter quesadilla (8)

Melt remaining 2 tablespoons Spread and brush one side of each tortilla. Icantbelieveitsnotbutter quesadilla (9)Turn tortillas over and arrange vegetable mixture evenly over half of each tortilla. Fold tortillas in half over filling. Icantbelieveitsnotbutter quesadilla (7)

You will cook quesadillas on one side and the flip over. Cook until crisp and cheese is melted, about 2 to 4 minutes. Icantbelieveitsnotbutter quesadilla (10)

My kiddos never knew that these were loaded with vegetables and with the chili powder and onion it has plenty of delicious flavor! Icantbelieveitsnotbutter quesadilla (11)

    These quesadillas looks so delicious and I will have to make these as a snack item. We usually just have sandwiches, but I need to make something different like this.

    We always have a tub of this in the fridge. Baking with it is SO easy and gotta love cilantro recipes. My fave!

    I love quesadillas. These look really good. I would have to do it without the onion, but the rest looks great.
