Monk Fruit Chocolate Chip Cookies

It’s Christmas time and that means there are plenty of sweet treats to enjoy. Growing up we always baked a lot of cookies so it’s only natural that our Christmas traditions start with baking in the kitchen and that’s why we are happy to partner with In The Raw® on this sweet holiday traditions recipe!

In The Raw® is the perfect solution for desserts and sweets because Monk Fruit In The Raw® is made from delicious vine-ripened monk fruit, and it’s the zero-calorie sweetener that tastes like sugar. That means more cookies to bake and more sweet treats to enjoy this holiday season.

The Perfect Soft Chocolate Chip Cookie Recipe

Ingredients –

  • 2 1/4 cups flour
  • 1/2 TSP baking soda
  • 2 sticks of butter at room temperature
  • 1/2 cup Monk Fruit In The Raw®
  • 1 cup brown sugar
  • 1 TSP salt
  • 2 TSP vanilla extract
  • 2 eggs
  • 2 cups chocolate chips

I am a huge fan of simple recipes that are flavorful and that work well and this recipe is no different. You’ll start by preheating the oven to 250 degrees. In a small bowl combine the flour and baking soda.

In your stand mixer combine the batter and sugars and cream them together until smooth. Add the eggs, salt and vanilla and make sure the mixture is smooth. Then add in the flour mixture.

Mix in the chocolate chips and get ready to bake!

I like to use a small ice cream scoop for cookies. It allows me to make cookies that are somewhat even and it’s perfect for scooping chocolate chip cookies.

I use a non-stick mat for cookies it also helps them bake evenly.

Bake for 8-10 minutes until golden brown! I like to take these out of the oven and cool them on a wire rack.

Serve these lightened up cookies during the holidays and be sure to enjoy a few with cold milk warm from the oven! They’re fluffy and soft and just a delicious chocolate chip cookie.

    I like my chocolate chip cookies to be soft. I think this is a good way to use the Monk Fruit in the Raw.

    My favorite kind of cookie are those that are soft and chewy. Everyone I know likes them crunchy, and I think they are crazy! This looks delicious!

    Yum! I love Sugar in the Raw. … My favorite Christmas cookie are Mexican Wedding Cookies. We get a platter of those every year to share with our family. So good!

    I’ve wanted to try out the Monk Fruit in the Raw for a while now. Do you find that the consistency of the cookies was the same or very similar as with regular sugar?

    I love these Soft Chocolate chip cookies. I have never used Monk Fruit in the Raw. I will have to try these cookies out. My favorite Christmas cookie is my Cutout Christmas Sugar Cookies!

    This looks so tasty! I always make Chocolate Chip Cookies and I have to have them soft. I love making gingerbread cookies too.
