Fun Foods for Families

We started out the year dedicated to eating better and staying more active as a family. I can say that we’ve accomplished this and more and that’s why it was so easy to partner with V8 for their V8 VegOut! Challenge!  That’s why we are encouraging more families to “veg out,” and since V8 is on a mission to get the world to step up and celebrate veggies now is the perfect time for you to join in on all the fun!

Start out by liking V8 on Facebook and join in on the fun daily challenges, dares and surprises all while taking your own love for veggies up a notch. Throughout the campaign, V8 will be sharing recipes and fun facts. Feel free to share these with your followers as well.

Fall is here and one of our family favorites for dinner is chili. Load it up with extra vegetables and the kiddos won’t know that their favorite dinner is now even better for them with V8!

7-Ingredient Chili Recipe

Ingredients –

    • 1 lb ground beef
    • 3 1/2 cups Low Sodium V8®
    • 2 cups kidney beans
    • 2 tablespoons chili powder
    • 1/2 teaspoon ground cumin
    • 1 chopped onion
    • 1 chopped bell pepper

The the fall and winter the best meals are the ones that are simple and cooked slowly over long periods of time. This recipe is one of those that you can make and then allow to simmer all day. It will be ready to go by dinner and is packed full of flavor.

The only thing I like to do is cook the ground beef ahead of time and then add it into the vegetable mix. Allow to simmer for an hour or more for flavor.

Serve with a warm corn bread and by far this is my kids favorite meal for fall and it’s really filling and great for a cool day. It’s also packed full of vegetables which makes me feel great too!

    This chili looks so delicious. I love to make stir fry’s with lots of veggies. I enjoy V8 heated with a dash of hot sauce and some cubes of cheese. I eat it like soup.

    I have never thought to use V8 in chili – or in cooking at all for that matter. This is why I visit your blog – to get these great ideas lol My husband is the chili cook here, so I’ll be forwarding this recipe to him. We’re getting cold here so it’s the perfect time for something warm in our tummies.

    This looks like a wonderful recipe. I love chili on cold days, and using V8 as a base makes perfect sense. Yum!

    I have always liked drinking V8 ever since I was a kid. My friends and cousins would thing it was gross me downing a whole glass of it but I loved it! I use it now in my stews but I like your idea of using it in chili!
