We started out the year dedicated to eating better and staying more active as a family. I can say that we’ve accomplished this and more and that’s why it was so easy to partner with V8 for their V8 VegOut! Challenge! Fall is here and one of our family favorites for dinner is chili. Load it up with extra vegetables and the kiddos won’t know that their favorite dinner is now even better for them with V8!
7-Ingredient Chili Recipe
- 1 lb ground beef
- 3 1/2 cups Low Sodium V8®
- 2 cups kidney beans
- 2 tablespoons chili powder
- 1/2 teaspoon ground cumin
- 1 chopped onion
- 1 chopped bell pepper
The the fall and winter the best meals are the ones that are simple and cooked slowly over long peroids of time. This recipe is one of those that you can make and then allow to simmer all day. It will be ready to go by dinner and is packed full of flavor.
The only thing I like to do is cook the ground beef ahead of time and then add it into the vegetable mix. Allow to simmer for an hour or more for flavor.
Serve with a warm corn bread and by far this is my kids favorite meal for fall and it’s really filling and great for a cool day. It’s also packed full of vegetables which makes me feel great too!
