It’s time for Halloween and as we get ready for Halloween parties and entertaining here’s always some fun to be had. California Ripe Olives provide that extra spook factor in many of my favorite Halloween recipes and this recipe is no different.
Having fun with dinner as we get closer to Halloween is important to me. It’s fun and festive and it’s something I grew up with my mom doing long before Pinterest and the internet. We always had olives around Halloween, they make the perfect eyeballs and are a delicious way to add flavor to a meal.
Cheesy Chicken Enchiladas Recipe
- 2 chicken breasts
- 1/2 cup chopped cilantro
- 1 cup chopped onion
- flour tortillas
- red enchilada sauce (found in your Hispanic food isle)
- 2 cups cheese shredded
- 8 large black olives
- red pimentos
Enchiladas are so easy to make. Start by boiling your chicken then you can easily chop it. Combine the chicken, cheese, cilantro and onion.
Using flour tortillas roll your cilantro cheese and chicken mix. Add a layer of red sauce along the bottom of a baking pan.
Preheat oven to 375 degrees.
Top the enchiladas with cheese and the rest of the red sauce. Bake in the oven for a half an hour.
Once you are ready to add the olives on top for serving you will add one large olive. Cut another olive in half and add a head. Stuff the body with red pimentos to make these olives extra creepy. Slices of olives make for the perfect legs.
Add these to the top of your cheesy chicken enchiladas and you have a spooky meal your whole family will enjoy!
