It’s time to get the kids backpacks, lunch boxes and supplies ready to head back to school! With back to school happening this week we have quickly been thrust into our busy fall schedule. After school activities and busy school days means that I want to be sure our dinners are healthy and filling.

Meal time is very important to our family and dinner is the time of day in which we all comes together before the end of the day. It’s the time we talk and reconnect, I hope that as our children get older they remember meals as an important part of growing up. Staying healthy is also very important to our family and I hope to inspire our children to eat healthy and live an active lifestyle.

One product you will see in our house is Silk Almond Coconut, it’s a great way to add more o our plant based diet.

Fast & Easy Fettuccine Alfredo Recipe

Ingredients:

  • 1 cup Silk Almond Coconut
  • 3 tbsp flour
  • 1 clove garlic
  • 1 tbsp butter
  • 1 cup Parmesan cheese
  • 1/3 cup cream cheese

Flavorful meals are full of fun new flavors and textures. We decided to serve our Alfredo with a tomato and basil bruschetta. To create I simply chopped one tomato, chopped fresh basil and added crushed garlic and a little salt and pepper. It’s a really light and flavorful topping that serves perfectly alongside grilled chicken.

To create the Alfredo sauce you will want to start by melting your butter and cooking the garlic at the same time. Add in the flour and stir continuously. Add the Silk and heat thoroughly, add the cheese and continue mixing.

I added in the cooked Fettuccine noodles and allowed the flavors to come together while I prepped our salad. I really believe in adding more plants into our diet and try to make half if not more of each of our meals fruits and vegetables.
