It’s time to break out the sand buckets and suntan lotion because summer is almost here! In the summer months we are most busy so I need simple dinner ideas to keep the family happy. Chicken strips are a family favorite and an easy way to please everyone.

In the summer months you will often see us get creative with chicken and this recipe is no different. It’s a flavorful combo that your whole family will enjoy and it’s easy to make too!

Ingredients:

  • 1/2 cup shredded coconut dried
  • 1 cup panko
  • 1 lb chicken breast cut into pieces
  • 1 cup Silk Almond Coconut Blend
  • 2 eggs

You will first want to start by browning your coconut in the oven. You don’t want it overcooked but a little to stick to the panko coating. Mix the Silk Almond Coconut Blend and eggs together in a separate bowl.

You will want to first start by dipping the chicken pieces in the Silk and egg blend. Then dip in your bread and coconut coating.

It’s fun to allow the older kiddos to be involved. It’s a great way for them to gain experience in the kitchen, after a god hand washing I allow them to dip the chicken pieces.

You can easily bake these but we used our deep fryer. It’s simple to use and makes large batches which is great for a large family like ours. I allow them to cook in oil for 7 minutes until golden brown.

Once they’re done just place in on a paper towel to cool. We served these coconut chicken pieces with a spicy jalapeno dip made with sour cream.
