Summer is finally here which means we’re spending a lot of time on the go. One of our favorite things to do is pack up lunch and head for the beach. It’s a great place to allow the kiddos to have some fun and get out some energy. I want our daughters to have the same blissful memories of the beach that I have so now that it’s summer vacation we visit the beach a lot. It’s close enough to pack up a picnic and just go so you will often find us in the sand.

There’s just something so special about sharing a meal with your family and around here we’re also preparing our meals together! One of the best ways to get kids eating healthy foods is to get them involved in preparation. It’s not only teaching them but inspiring their pallets as well. The kiddos love packing up a picnic so with their help we came up with a fun and very tasty sandwich recipe.

We like buying meat from the local deli and you can’t beat the quality of Dietz & Watson products. It’s the one brand that’s easy to rely on for taste and value when it comes to lunch meat and we can buy as little or as much as we may need because it’s sliced fresh to order.

Dietz & Watson Roast Beef and Cucumber Sandwich Recipe

Ingredients:

  • multigrain bread slices
  • Dietz & Watson Roast Beef
  • cucumber sliced
  • 1/4 cup cream cheese
  • 2 TBSP seeded mustard
  • 1 TBSP chopped shallot
  • sprouts
  • Dietz & Watson sliced cheddar cheese

We started first by creating a spread for our sandwich. Shallots are one of my kiddos favorite ingredients so we like to add it to cream cheese for sandwiches. We also add in a little of our favorite grain mustard, you probably have some right in your fridge to use.

It’s an easy step for the kiddos since they enjoy mixing things up.

Once the spread is ready you can start to assemble your sandwiches. One thing I like about buying meat from our local deli is that everyone can pick what kind they like. It’s easy to customize your sandwich exactly the way you like it.

I love how complex ordinary flavors can become and that’s why sandwiches are a family favorite for when we go on a picnic. It’s not only a healthy way to feed your family on the go but it’s an easy way to create lasting memories in the kitchen and on the road. Our family is on the go a lot and also bringing lunch saves the family budget too!

We topped the sandwiches with sprouts instead of lettuce because of the heat of summer. Cucumber is another great way to throw in a flavorful vegetable and mixes really well with the shallot and cream cheese spread.

    Great sandwiches! Love the taste of cream cheese on sandwiches. These are perfect for a beach or park picnic during summer.

    This made my mouth water! Now im hungry! I would love for us as a family to have a picnic on the lake or in the park. Always a fun thing to do.

    We live close to Acadia National Park in Maine, so we go there for picnics quite often. It’s so much fun to set up lunch right by the ocean on a sunny day. Those sandwiches look delicious!
