The weekdays can get so busy for our family. In between school and activities after school our weekdays are jam packed. I enjoy cooking and baking for my family and on those busy weekday mornings I want to make sure my girls are getting everything they need to start a new day successfully. Breakfast is the most important meal of the day and often as moms we can get busy, maybe you woke up late and fed the kids right before sending them off to school. We all have those mornings!

I do like to make breakfast for my children and on the days I am not rushing out the door late I try to create fun and exciting new things. One thing my girls love is pumpkin, throw it in a smoothie to add extra fiber to your morning or enjoy in soup with dinner at night.

Libby’s Pumpkin is also a great source of essentials vitamins like vitamin A and is a natural way to incorporate it into your diet. Pumpkin is one of those foods that are great all year around and that’s why we turn to products from Libby’s. I’ve been using Libby’s Pumpkin since I started baking and I’m still finding unique ways to incorporate one of my favorite ingredients into every day meals for our family!

Pumpkin Spice Pancake Recipe

Ingredients:

  • 1 1/2 cups milk
  • 1 cup Libby’s Pumpkin Puree Pumpkin Can 
  • 1 egg
  • 2 TBSP of vegetable oil
  • 2 cups flour
  • 3 TBSP brown sugar
  • 2 TSP baking powder
  • 2 TSP baking soda
  • 1 TSP cinnamon
  • 1 TSP ground nutmeg

I am a huge fan of simple foods I say it all the time, I know! I love recipes that I can throw everything into one bowl, mix and get cooking. This recipe is super simple!

Start first by combining your Libby’s Pure Pumpkin Puree, eggs, milk and oil.

Add in your sugar, spices and other dry ingredients and combine until well blended.

While you’re mixing your pancake batter start to heat your griddle for cooking your pancakes. They should cook on a medium heat for 4-6 minutes.

Serve with butter and sweet maple syrup and you have a quick and healthy start to a new day!

    My whole family would love to have these pancakes on Sunday and these look so delicious. I will have to make these and have bacon with them! They are healthy with the pumpkin!
