One of my daily delights is a cup of coffee so I was thrilled to see new seasonal flavors of my favorite Dunkin’ Donuts Coffee. There’s something extraordinary about the new Dunkin’ Donuts Coconut Flavored Coffee.

With summer coming the cool hint of cocnut in your coffee makes the perfect treat. Add ice and milk and you have a cool iced coffee that has wonderful flavor. I wanted to show off the coconut flavored coffee in a fun cookie that anyone will enjoy! I also decided to make a fun beach inspired Pinterest Board that will help you feel inspired for spring!

Chocolate Coconut Coffee Nest Cookies

Ingredients:

  • 1 cup of softened butter
  • 1/2 cup of sugar
  • 1 3/4 cups of flour
  • 1/4 TSP salt
  • 1/2 cup cocoa powder
  • 2 TBSP Dunkin’ Donuts Coconut Flavored Coffee grounds
  • Shredded coconut
  • Chocolate Covered Eggs

Coconut Coffee White Chocolate Ganache

  • 1 cup heavy cream
  • 2 TSP Dunkin’ Donuts Coconut Flavored Coffee
  • 6 ozs white chocolate chips

I started the recipe by first creaming together the butter and sugar. You’ll want to mix the flour, salt and cocoa powder together separately and then blend together with your butter mixture.

Once your dough has formed you’ll want to let it chill in the fridge for a half an hour.

While your cookie dough is firming in the fridge you will want to start the chocolate ganache. It’s a very simple process simply combine your cream, coffee and chocolate chips and cook over a low simmer until the chocolate melts.

Once the chocolate has started to melt allow the ganache to sit at room temperature.

Preheat oven to 350 degrees.

Once your dough is firm roll it out on a floured surface and cut circles for your cookies. Simply bake for 12 minutes.

Once they are out of the oven and are allowed to cool I made a basic chocolate frosting for topping them. I wanted to highlight the unique ganache I created so I simply topped with frosting and added ganache and coconut.

To create the nest I used a shredded coconut and chocolate covered eggs. You could toast your coconut or use a food coloring and make it colorful as a fun option.
