One thing that we love around here is coffee, it can get you up and going and ills our home with a wonderful scent. Coffee is something that is a part of our life and that means we always have our coffee compliments with us. When I think of enjoyable treats to go with my coffee I am always brought back to coffee cake. That sweet crumble on top gets me every time and with the strawberries brightly red and beautiful here in California there’s no better spring fruit to showcase than the strawberry!

Strawberry Sweet Cream Coffee Cake

Ingredients: 

Berry Filling –

  • 1 package of strawberries (chopped)
  • 1 TSP lemon zest
  • 1/2 cup half or MILK
  • 1/4 cup sugar

Coffee Cake –

  • 2 Cups of  Flour
  • ½ Cup Sugar
  •   1 TSP Baking Powder
  •  1/2 TSP Baking Soda
  • 1/2 TSP of salt
  • 1/2 cup melted butter
  • 1/2 cup  Coffee-mate Extra Sweet & Creamy liquid creamer
  • 1 egg

Crumb Top –

  • 3/4 cup flour
  • 3 TBSP of melted butter
  • 1/2 brown sugar

Directions:

Preheat oven to 350 degrees.

I first started by preparing the strawberry filling and by allowing the sugar to sit with the berries you create even better flavors. I used my stand mixer to easily add the wet ingredients together for the coffee cake. Once I had the topping made and the coffee cake batter made it was easy to start to assemble and bake my cake. Be sure to prep your crumb topping as well.

Top create the cake I simply greased a 9×9 pan. First spread your cake and then add a light layer of crumb topping. Add your berries and the best of the crumb topping on top.

Easily serve this coffee cake with your favorite variety of coffee along side your favorite products.

    Yummy! I love having coffee and reading a book. The Strawberry coffee cake will be the perfect addition to a sweet dessert to have while relax. Great recipe for bringing to parties.

    This is the best Coffee Cake recipe that I have ever seen. It looks so delicious and is a great Spring and Summer time dessert to make. I love this flavor of coffee creamer and know that I will love the flavor in this Coffee Cake.

    My favorite cup of coffee starts with a dark bold coffee & then a whole lot of creamier until it’s almost the color of my skin (true beige) & then I add vanilla extract unles my creamier is already vanilla flavored! I drink 12 cups a day! No lie! I post about it last night on facebook…LOL!

    My favorite cup of coffee starts with a warm soy milk base that is marked with some dark coffee. I then would top it off with a dollop of whipped cream and swirl caramel on top.

    My favorite cup of coffee is a large cup with enough creamer to make it light colored depending on which type of creamer I am using, if I am using flavored I use quite a bit, but if regular creamer just a little until the coffee is tan color and the coffee has to be super hot.

    my fave cup of coffee was the cappucino over in Italy – frothy with a dusting on top. Since I have a keurig and those frothy kcups with milk additives absolutely gum things up, I’ve shifted my fave cup of coffee to highlighting the sense of smell vs visual. I’m soothed by that hazelnut scent …. and of course that CM continues to provide a variety of SF versionns.
