With the holidays just over a week away we’ve been extremely busy getting ready for guests. The thing about hosting holiday meals is that you can never please everyone with the menu but you can offer plenty of dishes your guests will enjoy.
Some of the best dishes are fresh and simple and yet still have that homemade touch and that’s why pasta dishes are an easy go to this season. We shopped at our local Vons store for Barilla® Tortellini. With a few simple seasonal flavors I easily created a flavorful and festive dish.
Three Cheese and Sweet Potato Barilla® Tortellini Recipe
Ingredients:
- 1 package Barilla® Three-Cheese Tortellini
- 1/2 cup Parmesan cheese
- 2 TBSP fresh chopped basil
- 1 TBSP chopped shallot
- 1 1/4 cups chopped sweet potato
- 1 1/2 cup heavy cream
- 3 TBSP butter
Just because you are creating a holiday meal doesn’t mean it has to be complicated. Side dishes are often best served freshly made and this dish can easily be made before guests arrive.
By following the directions on the Tortellini I started by boiling my main ingredient. While you’re allowing that to come to a boil and cook you can start by sauteing your sweet potatoes in 2 TBSP of butter and your fresh basil.
Once the Tortellini is cooked you will want to mix together the cheese, 1 TBSP butter and the heavy cream. Simply combine with the cooked Barilla® Tortellini.
Delight your guests by serving the pasta in mini pumpkins, or squash. To make the squash stand up I sliced the bottoms creating a flat surface. Cut off the tops and hollow the squash out for serving.
Fill with your Three Cheese and Sweet Potato Barilla® Tortellini and serve warm, you could also place these in a 200 degree oven to keep warm. The squash will just add to the flavor so don’t be afraid of letting them warm for an hour.

Thats really cute in the little pumpkins! I wonder if you could bake the pumpkins all the way and have them almost like a bread bowl? I like both pumpkin and sweet potatoes and try to serve it often in the winter.
This looks delicious and so easy! I love it when you can take a “convenience” food like refrigerated pasta and add nutrition by throwing in some fresh vegetables and herbs. Makes weeknight dinners much easier for busy families.
