Every night we plan and prepare and some nights we don’t plan at all – dinner! The inevitable time of day where everyone is having a breakdown, and in between play dates and after school activities I manage to get dinner made.
Creating new flavors for our family to try is something I enjoy doing. We buy and eat a lot of vegetables so I’m always trying to find new and exciting ways to sneak them in every aspect of our meals. Recently Jif® introduced new Almond Butter and Cashew Butter. We’ve been trying to mix up meal time and with a little help from Jif® we’ve discovered many new flavors!
Cashew Butter Curry Chicken Lettuce Wraps
Ingredients:
- 1 head of butter lettuce
- 1 shallot
- 2 TSP curry powder
- 1 chicken breast chopped
- 1 TBSP Jif®Cashew Butter
- 2 TSP fresh chopped parsley
- 1/4 cup chopped carrots
- 1/4 cup chopped celery
- saffron (optional)
I say it time and time again but as a family of five our meals are often busy and I’m not looking to spend a lot of time in the kitchen. I like making everything in one pot and with this dish it’s simple to make everything in one pan.
This recipe is as easy as chopping your ingredients and adding them to a pan and cooking.
Allow to cook until your vegetables have softened and are cooked.
Toss in a slice of butter lettuce and you have a delicious and fun meal your whole family will enjoy!

I tried these for Christmas Eve and they were quite the hit. Everyone liked them as they werent heavy tasting and were filling. Easy to hold and easy to eat!

You could add frozen peas to this; very Indian, it seems that half of the Indian dishes that I make have peas in the. I LOVE cashew butter so how clever and easy this seems, thanks!
