Fun Foods for Families Lunch box school lunch ideas

On most weeknights we are pretty busy. I often find myself creating quick and easy meals.  Meals are made easy with products from Betty Crocker and one of my favorite simple side dishes feature the classic Betty Crocker  Scalloped Potatoes.

My favorite weeknight meals are quick and easy yet have an exciting twist. Using seasonal vegetables for our large family is a great way for us to stay in budget so this time of year we always keep sweet potatoes around.

Scalloped Sweet Potatoes Recipe

Ingredients:

  • 1 box of Betty Crocker Au Gratin Potatoes
  • 1 sweet potato sliced
  • 1 cup cheddar cheese
  • 2 TBSP butter
  • 1 1/2 cups of boiling water
  • 1/2 cup milk

By following the directions on the box of Betty Crocker I started first by preheating the oven to 375 degrees. Also I started boiling my water.

In a greased casserole dish I layered the uncooked potatoes and sweet potatoes with cheese. Adding the milk to the boiling water and pouring over the potatoes. I stopped with some fresh herbs for taste and color.

Bake for 30 minutes while dinner cooks and you have a delicious side dish that the entire family will enjoy!

    I love it that the sweet potato is now being used in so many traditional dishes. It’s one of my favorites.

    Wow what a great twist. I would never in a million years have thought to add sweet potatoes to Betty Crocker Au Gratin Potatoes. My family loves the Au Gratin Potatoes, so maybe adding sweet potatoes would be a nice addition for a change.

    We love scalloped potatoes but I honestly have never thought to put a sweet potatoe in them. It sounds interesting and adds color too. We try eating more sweet potatoes throughout the year because they are so good for you,
