Some of my favorite side dishes are baked together in a creamy casserole. Easy to create and customize for holidays casseroles make great holiday side dishes. As a family who eats a lot of vegetables I’m always trying to change things up a little, especially around the holidays.

Country Crock is one of those products we like to cook with, it’s easy to use and makes our vegetables taste great!  With 70% less saturated fat and 30% fewer calories than butter, adding Country Crock to your veggie dishes is a perfect way to keep your meal healthy too!

Cheesy Vegetable and Panko Casserole

Ingredients: 

  • 1/2 cup chopped cauliflower
  • 1/2 cup chopped broccoli
  • 1/2 cup chopped carrots
  • 1/4 cup Country Crock
  • 1/2 cup cubed cheddar cheese
  • 2 TBSP fresh parsley
  • 1/2 cup Panko

Since I am a huge fan of simple and easy meals that doesn’t change around the holidays. I need my meals to do double  duty and be easy and delicious.

I simply chop and toss everything into my casserole dish. I add in little spoonfuls of Country Crock and then top with Panko.

Add fresh parsley and more Country Crock and bake at 375 degrees for 35 minutes.

    love roasted veggies – we roast brussel sprouts w/balsamic drizzled over them, also green beans along with sweet potato and parsnips cut up. We saved a lot of calories by getting away from the classic sweetpotato casserole with pecans, pineapple, brown sugar and marshmallows.
