It’s holiday baking season which means my kitchen is warm and there are freshly baked goods coming out of my oven. This time of year it feels like all the recipes I am creating makes my dreams come true but comfort foods are my favorite!
Nothing says the holidays quite like fresh cranberries and walnuts. Making fresh sweet bread this time of year not only helps fill our home with a heavenly aroma but with every bite my comfort food dreams have come true! Using Diamond of California Nuts I created a recipe that makes my dreams come true.
Walnut & Cranberry Bread Recipe:
- 2/3 cup butter
- 1 1/2 cups sugar
- 2 eggs
- 1/2 cup plain yogurt
- 1/4 cup orange juice
- 1 cup Diamond of California walnut and cranberry mixture
- 1 TBSP orange peel
- 2 1/2 cups flour
- 1/2 TSP baking powder
- 1/2 TSP baking soda
- 1/2 TSP salt
- 1/4 TSP fresh ground nutmeg
- 1/2 TSP cinnamon
To start this recipe you will want to prepare your fresh cranberry and walnut mixture. In a medium sauce pan combine 2 cup of fresh cranberries and 3/4 cup of sugar. Add in 1 cup of Diamond of California Walnuts and 2 TBSP of orange juice. You’ll want to cook over medium heat until the cranberries start to pop and the walnuts are toasted.
Once this mix is cooked you’ll want to set it aside while you prep your bread mix.
To create the bread you want to cream together your sugar, eggs and softened butter. Add in flour and your other dry ingredients and mix together. Once your mix has come together you’ll wnat to fold in the cranberry and walnut mix.
Preheat oven to 350 degrees.
Place in a greased bread loaf pan.
To bake I simply topped the bread with a sprinkle of brown sugar and more chopped walnuts.
Bake for 50-60 minutes.
Once the bread has cooled you can easily slice it into pieces. I topped our slices of bread with a simple orange glaze frosting. 3/4 cup confectioners sugar and 3 TBSP of orange juice!!

This looks sooo yummy and I love the finishing touch with the orange glaze. I actually just got a bag of fresh cranberries for free at my supermarket (sale + coupon) and was looking for something to make with them and this recipe is perfect!
This reecipe just screams holiday! It would be great with coffee or cocoa but also with almost aanything. I could see this at either Thanksgiving or Christmas.
