With the weather being so hot I’ve been trying not to cook in the house. One the hot summer days we always try to cook outside on the grill so I was so happy when I saw some BBQ recipes on The Chew. I always enjoy learning new cooking tips and recipes and that’s why I watch The Chew. Unique and easy recipes your family will love every day of the week, The Chew is a great way to start my day. You can also tune into The Chew, weekdays 1e & 12p/c on ABC.

I really wanted to learn how to make my own BBQ sauce so I simply followed the recipes in this episode to create a delicious meal my whole family enjoyed. I love the idea of making a warm potato salad and this recipe is a unique non-mayo option for your summer BBQ.

BBQ Chicken and Warm Potato Salad 

I started first by prepping my potatoes for the warm potato salad. Since I knew this recipe would take the most time I wanted to be sure I could serve my meal together. I used the fingerling potatoes that I seem to always have in my fridge. What I really like about this recipe is how simple it is and yet how complex and earthy the flavors are.

 

Once I had sliced and boiled my potatoes I added in the mustard, olive oil, garlic, capers, and balsamic vinegar. I picked one fresh herb that I happened to have a lot of and used it in this recipe. You could use almost any fresh herb that you have in your kitchen. Just one though!

 

Once my potato salad was ready to be completed I started grilling the chicken. I found some free range organic drumsticks at a great price this week but you could easily use any cut of chicken you have on hand.

I have never made my own BBQ sauce so I was thrilled to see Carla included a recipe in this episode of The Chew. After following her easy directions I ended up with a very tasty sauce of my own BBQ sauce for the chicken. I will never buy bottled BBQ sauce ever again! It was so flavorful and bold and really turned out better than I expected.

You’ll want to be sure your chicken is grilled on both sides then apply your BBQ sauce. You don’t want to burn the sauce on the chicken simply allow it to caramelize and create a golden crunch on the outside.

I allowed my chicken to cook for another 6 minutes and served them hot with the potato salad.

 

I’ve really become inspired by The Chew and this recipe really shows off some of the new skills I’ve learned. I’ll never grill chicken the same way again!

    OMG ~ Yummy! It is early morning and this makes my mouth water! I have never hard warm potato salad, but I will be making this for sure! I am not crazy about capers, but think even if I reduce the amount it will still be terrific! Thank you so much!
