With it being almost fair season, well we have the Rose Festival City Fair going on right now in Downtown Portland, America will be enjoying endless amounts of fried foods.

One of our family favorites has to be funnel cakes. There’s nothing like sweet sugar, fresh berries and cream that makes you feel like summer is finally here!

We enjoy using International Delight products and one  we like is their Coldstone Sweet Cream Coffee Creamer. You can add to to any coffee drink, hot or cold. It makes great tasting cold coffee during the warm summer months and is great in a hot cup of joe during the dread of winter. So we deciding to put some International Delight Coldstone Creamer into some funnel cake for an added twist!

Remember, International Delight comes in a wide variety of great flavors so this recipe would work with any kind, and just add a great topping.

Ingredients (Enough to feed a family):

  • 2 eggs 1/2 – 1 cup International Delight Sweet Cream Coffee Creamer (add to taste)
  • 1/2 – 1 cup International Delight Sweet Cream Coffee Creamer
  • 1 cup water (adjust to make 2 cups of water and creamer total)
  • 2 1/2 cups all-purpose flour
  • 1 tablespoon baking powder 1/4 teaspoon salt
  • Oil for deep-fat frying
  • Toppings (confectioners’ sugar, fruits, syrups)

 

In a bowl combine the creamer, eggs, and water.  And then mix your dry ingredients in another bowl. You’ll want to combine the wet and dry ingredients in one large bowl and using your hand mixer to combine the ingredients until the mix is smooth. No matter what, your mixture needs to be smooth, so I suggest using a mixer.

In a pan or in a deep-fat fryer, heat oil to 375°. You’ll want to ladle your mix into the heated oil. Fry for 1-2 minutes on each side and drain on a paper towel. You’ll also want to top with fresh berries and then dust your funnel cake with confectioners’ sugar and serve warm and delicious!

 

I believe that everyone has a favorite flavor and I have to say my earliest coffee memories were of my Grandparents enjoying their coffee with International delight Irish Cream and now as an adult I still love that creamy flavor that brings me back to my childhood. I hope this funnel cake recipe brings you back to a sweet time in your life.

    I LOVE a good funnel cake, even though they are not good for anything but the soul! I can’t wait to share one with my daughters that state fair this fall. They have never had one!! I might even try this at home.

    I have not had a funnel cake in years, but I just love them! I never considered trying to make them at home. The recipe is much easier than I imagined. With fall coming this will make a wonderful treat!

    I missed the 4H fair this summer when we look forward to indulging in funnelcake. thanks for sharing this ID recipe. I’m encouraged by your post and the various comments to try this recipe. If it works, my county fair indulgence could become a regular homemade treat! What could go wrong with that? ok ok I can always walk a little bit further each day to compensate.

    These look amazing. I am surprised they aren’t harder to make. I have tried other recipes and they were a lot of work and didn’t turn out as nice as these. Thanks for sharing!
