There’s nothing quite like a good breakfast omelet and there’s nothing quite like veggies, bacon, and cheesy golden eggs all cooked together. Usually for brunch we make a mixture of things but what better way to enjoy all the breakfast items you love than in an omelet.

I wanted to share one of y favorite ways to use Velveeta block cheese or better known as liquid gold in this ultimate omelet recipe.

Cheesy Bacon Avocado Ultimate Breakfast Omelet 

  • 4 eggs
  • 2 slices of bacon
  • 1.4 cup Velveeta
  • 1/2 cup chopped broccoli
  • 1/4 cup chopped green onion
  • 1 avocado
  • 2 cups of chopped potatoes

Since this omelet is an ultimate omelet I have to say you have to make the potatoes. I used my mandolin to chop the pieces small and then cooked the breakfast fries in my fryer. I also baked my bacon at this time to create my own bacon bits. After cooking the potatoes in the fryer for 5 minutes they were perfectly golden.

I also melted my Velveeta cheese on the stove at this time. You’ll want all of your omelet items prepped and ready for cooking.

I used my omelet pan and heated up the pan before adding the eggs. If you don’t have an omelet pan use a small skillet or pan to cook the eggs. You’ll want your pan to be nice and hot so your eggs aren’t runny or take too long to cook.

I simply layered in bits of my ingredients including the potatoes and bacon. Once I added the Velveeta cheese I simply folded the omelet and cooked on both sides.

The results were a deliciously cheesy ultimate breakfast omelet.

Velveeta asked me if I knew any Liquid Gold Diggers. I’ll know more soon once they taste these dishes! Why? Because Liquid Gold Diggers love the Liquid Gold of Velveeta.

    We love Omelets and I always try to get as many veggies in as possible, lol. Velvetta truly makes a Omelet! I really love chopped green onions too, so this is my kind of Omelet!

    I always add avocado to my omelets if I have some in the house. I’d use Munster cheese for mine.
