Fun Foods for Families Lunch box school lunch ideas Uncategorized

I love a great casserole in fact some of my favorite meals are baked together in one pan. One product I’ve shown off many times on this blog is Country Crock. Right now Country Crock is having a Country Crock Stars Contest. They’re asking for Country Crock Stars to submit photos of themselves with their favorite casserole recipes.

Simply share a photo of yourself with your favorite casserole recipe and tell Country Crock in 100 words how you demonstrate creativity and resourcefulness in the kitchen. 3 finalists will win $5,000 and a trip for two to NYC.  12 Semi-Finalists will win cookware!

Here I am with my favorite casserole which is fresh and unique just like me! My creativity in the kitchen comes from fresh and local ingredients and I hope my casserole recipe inspires others to think outside of the box and try new flavors!

  • 3 TBSP Country Crock
  • Lasagna Noodles
  • 2 TSP Fresh Chopped Basil
  • 2 TSP Fresh Garlic
  • 2 Chopped Tomatoes
  • 1 1/2 cup chopped broccoli
  • 1 chopped onion
  • 1 1/2 cup chopped cauliflower
  • 1/2 cup chopped pepper
  • Parmesan or mozzarella cheese for topping
  • 1 cup heavy cream

I started first by cooking my veggies in the Country Crock on the stove top.

Country Crock (4)

I like having everything prepped and ready to go since you’ll be assembling the lasagna as you go.

I added the onions, broccoli, cauliflower, fresh basil and some Italian seasoning in a pan. Then add in the fresh crushed garlic.

Then add in Country Crock and cook until all of your veggies are tender.

Then you’ll add the cream and another 2 TBSP of Country Crock and cook until the sauce has thickened. I also add a pinch of black pepper at this time. There’s just something about cream and spicy black pepper that I love!

Once you have your cream sauce done you’ll want to make sure your oven is preheated to 375 DEGREES.  You’ll assemble your lasagna with layers of cream and veggies and noodles. The more fresh veggies the better!

Top with cheese and bake for 35 minutes. You’ll have a golden creamy casserole your whole family will enjoy!

Remember you can enter the Country Crock Stars contest today on the Country Crock Facebook page.
