In the summer the main source of cooking comes from my grill. It’s the best way to keep the house cool and who doesn’t love grilled food? This summer I’m going to make more recipes on my grill than ever before and last week I created this recipe. It was so easy to do and my kids just ate these mini pizzas up.

You could easily do chicken or create your own dough and grill the dough. There is so much you can do with these this is just a simple idea.

I first started with mini pita breads, sliced mozzarella and tomatoes. I also picked some of my fresh basil from my basil plant. I put some beef onto skewers. I normally wouldn’t grill such an expensive piece of meat but I thought what better way to try it. I’d usually brush the pita bread with butter but decided to swap my butter for oil.

One thing you will need when grilling is a great oil to use is Pompeian’s Grapeseed Oil or OlivExtra Premium Mediterranean Blend. You’ll want a good quality oil with rich flavor to compliment these mini pizzas. A chef secret for decades, grapeseed oil has similar health benefits to olive oil, but it is even more versatile for cooking due to its light taste and high smoke point. It’s perfect for grilling season!!

After my meat was done I assembled the base of the mini pizzas and drizzled them in a mix of  OlivExtra Premium Mediterranean Blend and pepper with some organic crushed garlic.

I placed them on the grill and cooked them on a low heat for 3-5 minutes. Need tips for grilling? Check out the grilling points for oil.

After grilling them for a few minutes I let them sit while I prepped the beef for the top of the pizzas.

I chopped up the beef and placed it on top. I used an organic New York strip for the ease to eat for the kids. We are not a big red meat eating family, but these came out great and very tasty and everyone ate them up!

    Let me tell you I am a pizza fanatic, I make it from scratch at least once a week and these look awesome. Fresh ingredients sure do make a difference, I can’t wait until the summer when I can go out a pick a tomato off the vine and serve it up with dinner.
