I’ll admit our week is pretty busy, between gymnastics and after school activities some nights I just need that easy meal. My kids on the other hand get tired of the same old thing so I try creating fun and tasty twists on some of our favorite foods. When it comes to creating an easy weeknight meal I believe simple and easy fits our family perfectly. It’s the simple foods that also taste the best!
Bacon Cheddar and Broccoli Kraft Mac & Cheese Bites
Ingredients:
- 1 blue box of Kraft Organic Mac & Cheese
- 1/2 cup organic broccoli
- 1/4 cup cheddar cheese
- 1/4 cup all natural bacon
- 1/4 panko bread crumbs
- 1 organic egg
I started by cooking the box of Kraft organic Mac & Cheese, I also baked the bacon while my Mac & Cheese cooked. You’ll want to preheat the oven to 375 degrees either way. Since I like simple recipes after the Mac & Cheese was cooked I simply combined all of the ingredients except the bacon. You can certainly put more bacon but I like the idea of a little going a long way.
To create fun little personal bites I baked them in a muffin pan at 375 for 10-15 minutes.
Top with a little cheese and bacon.
In just under 30 minutes I had a fun and simple diner that my kids were excited about. I like to sneak in extra veggies when I can so adding the broccoli is another simple way to do that.
