I live for simple and yet tasty foods. I think some of the best side dishes are simple and yet packed full of flavor. My kids love cauliflower, it’s one of those veggies we eat a lot and it’s pretty affordable too making it easy on our budget.

This recipe is super simple all you need is cauliflower and curry powder.

Simply coat chopped cauliflower in curry powder and add a little olive oil.

Bake at 375 degrees for 15 minutes on a baking sheet.

It’s such a wonderful side dish we eat it instead of rice and serve it along side a salad and some protein. Plus the kiddos love it!!

    I love cauliflower! I just don’t have a lot of different recipes to use it in. This one sounds really good. I can always add more or less curry depending on how my husband likes it. Thanks for the recipe!

    Cauliflower is really beginning to make a presence on the internet, I’ve seen many recipes using this awesome vegetable. I never liked it as a child which doesn’t say much, I hardly ate any veggies. There has been multiple sites with recipes for cauliflower pizza crust that I am dying to try, maybe I’ll try to sneek one over on the kids, HA!

    Roasted veggies are great during the cold weather. Then we have a gap until the grill gets fired up in warm weather and all our roasted veggies become grilled veggies.
    I know olive oil is good for us, but I like using the olive oil spray . My kids love lemon pepper flavoring
