It’s noon and I really need an afternoon treat so I look in my fridge for inspiration. A nice treat is just what my afternoon needs so in just an hour I’ll have Vanilla Mocha Popsicles that also go well with my health and fitness goals. I want an afternoon treat but I don’t want to add to my waistline if you know what I mean.

  That’s why International Delight Light Iced Coffee is such a treat, and hello only 100 calories too! As the weather slowly starts to warm up a cool treat is just what my afternoon needs. I am a firm believer in the simple things and that often the most simple things also taste the best. I just love coffee but my favorite way to drink coffee is cold. I created this fun recipe that you can whip and enjoy this afternoon!  

 

Light Vanilla Mocha Popsicles Recipe

Ingredients: 

  • 3/4 cup heavy cream
  • 1 cup International Delight Light Vanilla Iced Coffee
  • 1/2 cup fat free milk
  • high quality cocoa powder

I also make sure when I’m trying to whip heavy cream that my bowl is cold. Whether you use a stand mixer, hand mixer or even whip it by hand always be sure the bowl you start with is cold. Put it in your freezer for 10-15 minutes if you can ahead of time.

I added all of the ingredients including 1 tsp of cocoa powder into my stand mixer bowl (cold bowl) and mixed until it was slightly thick. Not as thick as a mousse but you want that heavy cream to thicken it up a little. You’ll add your Popsicle mix into your molds. I just reused old yogurt cups and used Popsicle sticks.

Freeze for an hour or two. To remove the pops from the containers simply run cold water around the outside. Make sure not to get the inside wet but it will loosen up the sides so they slide right out. I dipped mine in a little of the high quality cocoa powder. It felt really luxurious and like a decadent treat without all the work.
