In our house we love asparagus, so I’ve been trying to come up with unique ways to eat one of our favorite foods. In eating a whole food diet I want our means to be as simple and as natural as possible. The less ingrients the better and that’s why you’ll love this asparagus avocado citrus style salad. The lemon and chive brighten up the asparagus and pair naturally with the avocado.
This simple recipe will help simplify your life by making dinner easy and tasty!
Ingredients:
- 1 bunch of organic asparagus
- 2 tbsp Land O Lakes® Butter with Canola Oil
- 2 organic avocados
- 1 organic lemon
- 2 tbsp chopped mini organic chives
- sea salt and pepper to taste
I started out by first cooking the asparagus in the Land O Lakes® Butter with Canola Oil.

I cook the asparagus for 10 minutes on a lower heat. You just want them to be soft but not mushy. Asparagus can get mushy easily so lightly cook your asparagus. I added a little stone ground pepper because I’m obsessed with it mostly.
You’ll want to chop up your avocado and squeeze in the lemon. I just added to taste but I squeeze both sides on one lemon.
Then chop your chives and add those into the bowl and mix. You could easily add onion or even bell peppers and I bet this would be just as good.
Simply mix in with our cooked but slightly cooled asparagus and enjoy!
