I happened to pick up a large quantity of sweet potatoes so I was left trying to come up with ways to use it. I love quick breads but I’ve enjoyed starting to make bundt cakes. I found there’s so many things you can do and it always looks incredible on a plate. It’s the easy cake for the not so crafty baker and decorator like myself. After roasting the sweet potatoes in thee oven I pureed them to get my fresh sweet potato.

Ingredients:

3 organic brown eggs
1 cup organic canola oil
1 1/2 cup puree sweet potatoes
1 teaspoon vanilla
1 3/4 cups organic cane sugar
2 1/2 cups organic white flour
1/2 teaspoon cinnamon
1/4 teaspoon nutmeg
1/4 teaspoon sea salt
1 tsp. baking soda
1/2 cup organic raisins
1/2 cup chopped walnuts

I simply mixed all of the ingredients together in a large bowl. Then added the nuts and raisins. I like to use a baking spray to make sure my cake won’t stick to my pan.

Bake at 350 degrees for 55 minutes.

When it has cooled down for 20 minutes I flip it over onto a pan and allow to to cool further.

Maple Glaze Frosting Recipe:

1 1/2 cups organic confectioners sugar
3 tablespoons softened organic sweet cream butter
2 teaspoons maple extract
3 teaspoons of organic half and half

Simply blend the ingredients together and add more half and half until you reach your desired consistency.Top with chopped walnuts.

    I have to say this looks pretty darn good for being made out of sweet potatoes , which I’m not really a fan of. But I sure would love to try a slice of this cake! 🙂
