Easy Broccoli and Cheese Quiche Recipe

Ingredients:

2 tablespoons butter
1 onion, minced
1 teaspoon minced garlic
2 cups chopped fresh broccoli
1 (9 inch) unbaked pie crust
1 1/2 cups shredded mozzarella cheese
4 eggs, well beaten
1 1/2 cups milk
1 teaspoon salt
1/2 teaspoon black pepper
1 tablespoon butter, melted

First you’ll want to chop the onion and broccoli and saute it on the stove with 2 tbsp of butter. You’ll want these to become soft and cooked but not brown.

Since this is a super simple recipe I used a pre-made Safeway pie crust but you could certainly make your own. After your onions and broccoli are soft you’ll add them to pie crust. You will then sprinkle the mozzarella cheese over the onion and broccoli mixture.

In a small bowl mix your milk, eggs, melted butter and pepper.

You’ll add this egg mixture over the broccoli and cheese.

Bake at 350 degrees for 40 minutes until the quiche is firm.

I love quiche, but I usually only have it with spinach or lorraine. I’m going to have to definitely try this for a variety. Thanks for the recipe!
