Two Super Simple Summer Pasta Salad Recipes

I got these recipes from my mom in fact this is how she always made pasta salad and as a kid I gobbled it up.She would make different versions of basically the same salad so this is how I also like to do it. The big secret to her pasta salad was one thing, Newman’s Own Dressing. I like to mix a little of the olive oil Italian with the Cesar dressing.

It’s so easy to create a unique salad. I bought some organic macaroni from Costco so I always have tons of it around. I had some mini cucumbers that I needed to use and my girls just love baby corn. I served this cold so before you add your veggies the pasta should be somewhat cooled. I drizzle with dressing, and some organic pepper and let it sit in the fridge. Once cooled I added some shredded swiss cheese. My whole family loved it!

Another super simple salad but this time I added some fresh italian sausage. I got it in a super sale at Whole Foods and it’s all local meat. I simply boiled and cut it into pieces. I also added organic grape tomatoes, fresh mozzarella balls and sliced zucchini.

I’ve been making batches of different salads and I’m kind of obsessed with seeing what I can come up with. My family just eats it up and it makes a great side with grilled chicken or any other summer food.

    This looks really good! I always use the recipe on the McCormick Salad Supreme bottle and it comes out pretty good but itwould be nice to mix it up and try something new. I never thought to add sausage to pasta salad! Thanks for sharing!
