We buy a lot of fruits and vegetables in our home and once a week I look around my refrigerator unsure of what I’m going to cook. I always want to use up all of the fruits and veggies I buy and strive to feed my family the most fresh foods that I can. That said when I want to use up those leftover veggies from the week one of the easiest ways to do it is with a one skillet meal.

Ingredients:

  • 4 red potatoes (chopped)
  • 8 mini sweet peppers (chopped)
  • 3 organic tomatoes (chopped)
  • 1/2 organic chopped cilantro
  • 6 brown organic eggs

I literally browned the potatoes then added the veggies and allowed it to cook for 7 minutes until the veggies were all soft. I then added the eggs and cooked it for another 8-10 minutes. I had leftover tortillas from taco night this week so I also decided to use those up. Top with fresh cilantro and you have an easy skillet meal. We ate this for dinner but you could easily make it for breakfast. One of the easiest ways to use up leftover veggies from the week and you can use whatever you have laying around!

    My 12 year old’s favorite breakfast but I never thought of putting in the potatoes. now THAT is a complete meal! Thanks for sharing the recipe!
