I love okra, it’s one of those vegetables that bring me back to my childhood. In fact, every time I taste okra it reminds me of my Grandfather. The man loved to eat and one of the things we both enjoyed was okra. I’ll eat it almost any way but because it can be slimy it’s often hard to cook. That’s what is so great about roasting okra it’s not nearly as slimy and you can’t mess it up.

This recipe is so simple you don’t need anything other than okra, olive oil, kosher salt and pepper.

You need to start off by cutting off the tops of the okra.

Preheat your oven to 400 degrees and drizzle your olive oil, kosher salt, and pepper over top. I told you this was simple. You could easily dress it up with your favorite seasonings as well.

Bake on a baking sheet for 10 minutes until your okra is soft. I like them slightly browned. This recipe is truly simple and yet so good, cook up a batch for your bbq’s. I find myself having a hard time sharing though.

    My husband is a big Okra fan. He’d love for me to make this. I’m not a big fan of Okra.

    I tried okra for the first time a few years ago, after all these years. It was actually breaded okra but it was good. Never had it this way before but I love veggies so thanks for sharing.
