Last week my family attended a press event for a local restaurant and they served the most delicious red potato mashed potatoes with cauliflower. I never thought of mixing the two but in the past have made mashed cauliflower. My kiddos had no idea that we ate an entire head of cauliflower either and its a great way to sneak in those extra veggies!

The recipe itself is super simple. I peeled the potatoes and cut up the cauliflower and boiled it all for 20 minutes.

I use my stand mixer for a lot of things and one of the best ways to get creamy potatoes is to use a stand mixer and mix them. You could also use a hand mixer if that’s all you have. Because the cauliflower and potatoes are so soft it makes them easy to blend. Add a little butter and crushed garlic and you have perfect potatoes. It’s an easy way to create something new.

    You really have some great ideas when it comes to cooking. I have a difficult time getting my grandson to eat veggies, even potatoes but maybe he’d try this. I know it sounds good to me.

    I love cauliflower raw but not too much cooked. And my kids for sure wouldn’t eat cooked cauliflower. but I think I might give this a try and see if they notice if there is cauliflower in there mashed potatoes, it does look good.
