I just love summer squash and ever since I discovered the small mozzarella balls in my grocery stores deli my husband has been asking for them. In fact, they’re so fun the whole family loves them!

This butternut squash mac and cheese recipe is so simple, you know I’m all about the simple yet healthy recipes.

Ingredients:

  • butternut squash cubed
  • your favorite pasta
  • olive oil
  • mozzarella balls (or sliced up)

So simple, steam your squash and add it to your cooked pasta. Add olive oil and any other seasonings as desired. It’s s simple and so delicious!

    This recipe looks good, I have never had butternut squash before or heard of mozzarella balls. It is a healthy and easy recipe so I might have to give it a try

    where do I find mozza balls? is this something common at the grocery store?

      My store has a number of sizes. I think they are if you look in your gourmet cheese section.
