Maybe I’m trying to escape from all the rain here in the Pacific Northwest but it seems as if my tastes lately have been very summer-y. I just love tomato and mozzarella and since buying my own organic basil plant I’ve been trying to find ways to use it. This salad was a super easy recipe that I cut and made in only 15 minutes. Bring it to the summer picnic or bbq.

I simply cut the tomato and mozzarella the key to not getting mushy tomatoes is to cut them and let them sit on a paper towel for 10 minutes. I also don’t use a lot of salt but put a little salt over the tops. To make the sauce I simply cut up fresh organic basil added organic black pepper and organic olive oil and drizzled it over top. Super easy and it was so good!
