I admit the past 6 months I have not enjoyed cooking nearly as much as I used to. I’m making a new commitment to myself that I’ll spend more time doing the things I truly enjoy. Not only does nourishing my family bring me joy but so does spending time in the kitchen. I believe that buying in season helps me save a lot on organic foods but also provides us with plenty of variety. I was able to pick up organic zucchini at the store this week for literally 50cents and fed my family fresh wholesome veggies for just a dollar a meal!

For this fun and easy roasted zucchini recipe I roasted cut zucchini in the oven and drizzled it with a little organic olive oil, pepper and garlic salt. My favorite organic spices and seasonings come from Simply Organic.

To make it a super easy meal I baked my chicken along side of the zucchini at 350 degrees for 20 minutes and it was perfect!

    This looks really good. great side dish and very healthy. I have really only eaten zucchini fried , which isn’t the healthiest way to prepare it. i will have to give this a try 🙂

    Sometimes I just toss zucchini in a frying pan (my Greenpan), with olive oil or butter, and seasonings (salt and italian spices, or my husband found a great seasoning called “Natures Seasonings”.

    How long did you bake the zucchini and at what temperature?

      350 for 20-25 minutes.
