Crockpot Recipes – Corned Beef and Cabbage

Fun Foods for Families Lunch box school lunch ideas

I really love using my Crockpot for certain meals, and as the weather starts to get warmer I will use my oven less and Crockpot more. I enjoy cooking but on hot summer days there’s nothing better than a meal that doesn’t involve heating up my entire kitchen.

Growing up my mom made corned beef and cabbage every year for St. Patrick’s Day. My husband requested that I never make it again because it’s a very salty type of meat and I make it because of tradition. This will be my last year making it so I wanted to share my recipe.

Crockpot Recipes – Corned Beef and Cabbage

What you will need:

  • Corned beef (can be found in any grocery store)
  • Cabbage
  • carrots
  • fresh Parsley

How do do it:

Add water to your Crockpot and cook the beef for 4 hours. Then add cabbage, carrots, and parsley. I also added some extra seasonings to taste and cooked for another 2 hours.

Pull out of the Crockpot and serve with your favorite Irish Soda Bread.

Your husband requested that you never make it again? That cracked me up! I’ve only made it once, but skipped it this year.

I LOVE using my crockpot, too. I use it all winter long for soups and stews, but I need to use it more in the summer.

While the meat is so salty the beggies taste really good, but it’s also very greasy from all the fat. I did mine the same way. I wasn’t going to make it but Pat and his friends requeted it.
