Eggs are such a great way to create a fun meal especially this spring where we have had Easter and Mother’s Day. For Mother’s Day I love the idea of creating a bite sized brunch featuring eggs as the main ingredient. I created these Bacon Cheddar Deviled Eggs with Land O’Lakes organic eggs which are perfect for this bite sized brunch.
Bacon Cheddar Deviled Eggs Recipe
What You Will Need:
- 12 organic eggs
- bacon (I used an aged organic bacon from Organic Prairie)
- shredded cheddar cheese
- 2 tbps mustard
What To Do:
Boil the eggs like you’d make deviled eggs and cool them at room temperature. Cook the bacon to crispy and save 2 tbps of bacon fat. After you cut the eggs in half and save the yolks, add the bacon fat, cheddar cheese and 2 tbps mustard and whip together. You want the cheese to be very fine and after some whipping you’ll see it disappears into the egg mix. You may need a little more bacon fat and black pepper. Fill the eggs with the mix and chop the cooked bacon. Gently top eggs with bacon and refrigerate.

I also loved the idea of using the mini muffin tin I received and creating my favorite muffins, blueberry!
