Every summer get together needs some sort of potato and after seeing a photo in a magazine I recreated what I came up with as a Cheesy Potato Bite. You can make a lot of these in no time and they’re fun and easy and you throw them on the grill to head them up. They’d make a great addition to any 4th of July gathering.
- small organic yukon gold potatoes
- organic sweet cream butter
- bacon (I use Organic Prairie bacon)
- shredded cheddar cheese
- organic green onions
- The recipe is rather simple, and you could easily do this all right on the grill. You want to cut the potatoes in half and cook them for 20 minutes on 350 degrees. Scoop out the insides and add some cheddar cheese to the filling. Plop the filling back into the skin and top with your favorite toppings. I sliced small bacon stripes and added a few diced green onions.
