Fun Foods For The 4th – Cheesy Potato Bites

Every summer get together needs some sort of potato and after seeing a photo in a magazine I recreated what I came up with as a Cheesy Potato Bite. You can make a lot of these in no time and they’re fun and easy and you throw them on the grill to head them up. They’d make a great addition to any 4th of July gathering.

Cheesy Bacon Potato Bites Recipe
Prep time: 10 mins
Cook time: 25 mins
Total time: 35 mins
Ingredients
  • small organic yukon gold potatoes
  • organic sweet cream butter
  • bacon (I use Organic Prairie bacon)
  • shredded cheddar cheese
  • organic green onions
Instructions
  1. The recipe is rather simple, and you could easily do this all right on the grill. You want to cut the potatoes in half and cook them for 20 minutes on 350 degrees. Scoop out the insides and add some cheddar cheese to the filling. Plop the filling back into the skin and top with your favorite toppings. I sliced small bacon stripes and added a few diced green onions.

    These look yummy. I have often wanted to try the recipes where you scoop out the potatoes and refill them but I have always chickened out. You made these sound easy to make. I need to check the grocery store for yukon gold potatoes. Do they make a difference?

    Yum!! On my list as of now. In response to Debbie above, the Yukon Gold potatoes to me seem a lot creamier tasting, so I think that I would try to use those for the recipe if possible. Hungry now.

    I like this recipe. Seems like you can add anything you want depending on mood and come up with a complete meal inside a half of a potato.
